Brookes Restaurant Cookery School

Unless otherwise specified, adult courses start at 9.15am for coffee, with the course itself running from 9.30am to 2.30pm (approx.). Authentic Thai

Join Leon for a fantastic Thai cooking experience. Explore the aromatic flavours of this exotic cuisine and learn some delicious new recipes!

Working with authentic Thai ingredients you will learn how to create popular dishes including fish cakes with a dipping sauce, hot and sour prawn soup, chicken green curry and sticky rice.

You will enjoy both demonstrations and hands-on learning. By the end of the course you will have developed enough knowledge to host your own Thai themed dinner party!

Exploring India (4 week evening course)

In this four week course, Kashmira will take you on a journey of India's diverse cuisine. A different region will be introduced every week. From the creamy, royal food of Northern India to the sweet and sour, spicy, vegetarian, Gujarati dishes of the west where Kashmira comes from.

The South Indian food is based on coconut, fish and spices, while the Eastern will introduce you to some more spices.

So come along and learn to cook Indian dishes that will impress your family and friends!

Indian Supper

Our guest Kashmira will be sharing her wealth of knowledge in Indian cuisine, including the use of a variety of spices. She will be teaching us how to cook dishes that have been passed down through her family for generations as well as some recipes that she has discovered from her travels around India.

Classic Breads

This course is a firm favourite of the chefs with attendees being amazed at what they produce and take home. Be prepared to roll your sleeves up as this course is very hands on. You will be making the doughs by hand using top quality flour and grains from our local mill (Wessex Mill).

You will be given advice and tips on how to knead, prove and bake to get the best results. A range of breads will be created which you will take home at the end of the session.

Vegetarian Cookery

Whether you're a vegetarian or not you'll come away from this course knowing how to make the most of local, seasonal produce.

We are regularly complimented on the vegetarian options we select for the Brookes Restaurant menu and in this course we will teach you how to make some of them!

We will be sharing secrets for success and some useful hints and tips along the way.

Gluten Free Cookery

Learn about the principles of gluten free baking in this one day masterclass. You will learn how to make crusty baguettes, light and flaky pastry and velvety muffins.

Our tutor Adriana Rabinovich, an expert in gluten free baking, will unravel the myths of baking gluten free, and show step by step how to get great results baking gluten free.

Bread and pastry items will include, baquettes, quiche and sausage pasties, mini bakewells and muffins.

Taste of the Mediterranean

Let Leon take you on a gastronomic tour around the Mediterranean. You will be shown how to prepare and cook a feast of dishes from a variety of Mediterranean countries together with lots of tips, talking and tasting.

Spanish Tapas

Let us take you on a gastronomic tour of Spain, creating a number of vibrant and flavourful Spanish dishes! The practical course will start with demonstrations by Leon, who represented Oxford Brookes University at international level competition in Spain, two years running, and has a real passion for Spanish food and wine.

Around the World in Breads

This course is suitable for enthusiastic amateurs as well as the more experienced bread makers.

Be prepared for a full day of hands on bread making, covering such things as Polish poppy seed, spinach flat bread, hot cross buns, chickpea flatbread, Irish soda bread and cornbread.

Junior Cookery School

Winter Warmers

In this course children will enjoy making delicious comfort food, both sweet and savory.

Dishes include lentil and roasted vegetable plaite, hot cross buns, spinach and cheese scones and tasty soup.

Brookes Restaurant Wine School

Join our Wine School to complete two great courses offered by the Wine and Spirits Education Trust (WSET). Start with the basics and develop your knowledge over time. Please note that attendees must be 18 years or over.
