Brookes Restaurant Cookery School

Unless otherwise specified, adult courses start at 9.15am for coffee, with the course itself running from 9.30am to 2.30pm (approx.). Vegetarian Cooking

Whether you're a vegetarian or not you'll come away from this course knowing how to make the most of local, seasonal produce.

Our Head Chef, Richard Watson is regularly complimented on the vegetarian options he selects for the Brookes Restaurant menu and in this course he will teach you how to make some of them!

Richard will be sharing his secrets for success and some useful hints and tips along the way.

Pastry Delights

Join us for an exciting day learning how to make your very own delicious croissants and Danish pastries.

This course is very hands-on, so be prepared to roll up your sleeves to create some scrumptious buttery delights.

Taste of the Mediterranean

With summer around the corner let us take you on a gastronomic tour around the Mediterranean.

You will be shown how to prepare and cook a feast of dishes from a variety of Mediterranean countries, together with lots of tips, talking and tasting.

Spanish Tapas

Let us take you on a gastronomic tour of Spain, creating a number of vibrant and flavourful Spanish dishes!

This practical course will start with demonstrations by Leon, who represented Oxford Brookes University at international level competition in Spain, two years running, and has a real passion for Spanish food and wine.

Classic Bread

This course is a firm favourite. Attendees are always amazed at what they produce and take home.

Be prepared to roll your sleeves up as this course is very hands on. You will be making the doughs by hand using top quality flour and grains from our local mill.

You will be given advice and tips on how to knead, prove and bake to get the best results.

At the end of the session we will sit down to some lovely homemade bread, local cheeses and a glass of wine or soft drink.

Summer Vegetarian Course

Victoria Buob-Aldorf, who runs our 'Taste of France' course, will be returning to introduce you to some vegetarian dishes that are perfect for the summer!

Fresh back from her recent travels she will show you how to make some vibrant and exciting salads, a baked Mediterranean aubergine cheesecake, goat's cheese shallot tart tatin, a crisp seeded flatbread and borani (Iranian beetroot dip).

Junior Cookery School

Brookes Restaurant Wine School

Join our Wine School to complete two great courses offered by the Wine and Spirits Education Trust (WSET). Start with the basics and develop your knowledge over time. Please note that attendees must be 18 years or over.
