WSET Level 2

This course advances the exploration of the grapes variety and how this influences the styles produced around the world. The course not only covers variety and regions but also sparkling, sweet and fortified styles and introduces the subject of spirits. Comparative tastings and the discussion of food pairing are the key components of every lesson as is the understanding of the label to help you make informed choices.

To gain the qualification students need to pass a multiple-choice paper of 50 questions

The course has three consecutive study days starting at 9.15am on 6, 13 and 20 July 2017

Brookes Restaurant Cookery School

Unless otherwise specified, adult courses start at 9.15am for coffee, with the course itself running from 9.30am to 2.30pm (approx.). Taste of the Mediterranean

Let Leon take you on a gastronomic tour around the Mediterranean. You will be shown how to prepare and cook a feast of dishes from a variety of Mediterranean countries together with lots of tips, talking and tasting.

Vegan

Whether you are a vegan, thinking of becoming vegan or just cooking vegan for family and friends, this course is for you! We'll show you some easy vegan dishes that are nutritionally balanced and wonderfully tasty.

We will make a beautiful lunch together and through the day demonstrate and discuss some of the ways to have a really healthy vegan diet and still enjoy some great treats - from vegan chocolate to cakes.

10 week cookery course

This 10 week cookery course is every Wednesday evening from 17th May, starting at 6.15pm until 9.30pm.

This course is suitable for enthusiastic amateurs who are looking to further their skills and gain knowledge from the professionals.

By the end of the 10 weeks you will have learnt a variety of skills and will have gained confidence in the kitchen.

You will be taught by the tutors that train our Oxford School of Hospitality students, on a day to day basis, for Brookes Restaurant, so you will be in good hands!

Spanish Tapas

Let us take you on a gastronomic tour of Spain, creating a number of vibrant and flavourful Spanish dishes! The practical course will start with demonstrations by Leon, who represented Oxford Brookes University at international level competition in Spain, two years running, and has a real passion for Spanish food and wine.

Classic Bread

This course is a firm favourite of the chefs with attendees being amazed at what they produce and take home.

Be prepared to roll your sleeves up as this course is very hands on. You will be making the doughs by hand using top quality flour and grains from our local mill (Wessex Mill).

You will be given advice and tips on how to knead, prove and bake to get the best results. A range of breads will be created which you will take home at the end of the session.

Advanced Bread

You're confident with the classic breads, so now it's time to move on to the artisan breads. If you have a passion for making bread, this course will give you the confidence to try more complex recipes at home.

We'll be looking at sour dough as well as a couple of other breads requiring a starter or biga. Once again, our doughs will be made using top quality flour and grains from our local mill in Wantage.

You will be taken through each stage step by step and will be amazed at what you will have produced by the end of the session. All these breads will be yours to take away with you.

Thai

Join Leon for a fantastic Thai cooking experience. Explore the aromatic flavours of this exotic cuisine and learn some delicious new recipes.

Working with authentic Thai ingredients you will learn how to create popular dishes including fish cakes with a dipping sauce, hot and sour prawn soup, chicken green curry and sticky rice.

You will enjoy both demonstrations and hands-on learning. By the end of the course you will have developed enough knowledge to host your own Thai themed dinner party!

Junior Cookery School
